Here's one I did last weekend -- a riff on the popular watermelon salad idea.
Watermelon Salad Skewers
~ Cut watermelon into bite-sized cubed. Sprinkle with a little sea salt (really makes a difference in bringing out the flavour), and toss with fresh squeezed lime juice.
~ Roll cream cheese or chèvre into small balls. Roll the balls in finely chopped walnuts.
~ Using cocktail skewers or toothpicks, spear a cube of prepared watermelon, a fresh mint leaf, and a cheese ball.
~ Serve.
I bet you could also do it with little rounds topped with mint & watermelon, instead of the skewers -- haven't tried that way yet though.
