I kind of like Frittatas and having been making this recipe sans the chicken. Very easy to make. I use fresh uncooked spinach and mainly use cheddar cheese.
Spinach Frittata -
Servings: 4
1/2 cup julienned sweet red pepper
1/2 cup chopped onion
2 tablespoons olive or vegetable oil
3 eggs
1/2 cup milk
1 cup chopped cooked chicken
1 (10 ounce) package frozen chopped
spinach, thawed and squeezed dry
1/2 cup shredded mozzarella cheese
1 tablespoon grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1. In a skillet, saute the red pepper and onion in oil until tender. In a bowl, beat eggs and milk. Stir in chicken if desired, 1/2 cup spinach, mozzarella and Parmesan cheeses, salt and pepper (save remaining spinach for another use). Add to the skillet. Cover and cook over medium heat for 7-10 minutes or until completely set. Cut into wedges.
